I’m back with another quick, easy, and delicious weeknight recipe, and this time we’re making Summer Chicken Noodle Bowls! No, not chicken noodle like the soup but an Asian-fusion-type bowl with veggies, spice, and a ton of flavor.
I love making these bowls because they are healthy, so easy to make after a busy work day during the week, and give you leftovers you can use for lunch the next day or dinner. That’s always a win in my book! We are OBSESSED with the peanut dressing in this recipe, so delish. Try it out and let me know what you think!

SUMMER CHICKEN NOODLE BOWL
Ingredients
- 2-3 cups shredded lettuce (I like romaine or butter)
- 4 rainbow carrots julienned or shaved
- 4 green onions chopped
- 1/2 cup cilantro or mint (I prefer mint, especially during the summer)
- 1/2 cup diced peaches (or mango)
- 2 cucumbers thinly sliced
- 1/4 cup pickled jalapeños
- 1/3 cup peanuts chopped (or pumpkin seeds)
- Package of rice noodles cooked
- 2 cups shredded chicken (pro tip: use a rotisserie to make it easier)
- 1 avocado chopped
PEANUT DRESSING
insanely good!!
- 1/2 cup creamy peanut butter (sub almond butter if you prefer)
- 1/3 cup tamari
- 1/4 cup avocado oil
- 1/4 cup rice vinegar
- 1-2 tablespoons chili sauce or flakes (we are OBSESSED with this chili crunch)
- 2 tablespoons local honey
Directions
CHICKEN: If using the rotisserie, add some avocado oil, tamari, and honey to a pan and sauté the chicken to warm up and season. You can use this same seasoning if cooking chicken thighs or breasts.
SALAD: Combine the lettuce, carrots, green onions, cilantro, peaches, cucumbers, jalapeños, and nuts in a large bowl. Leave the jalapeños off for the kids, and hide the lettuce with the noodles and chicken 😉
DRESSING: Combine all ingredients in a food processor or blender and blend until smooth. Feel free to add more chili flakes for extra spice!
SERVE: Divide the salad between bowls. Top each bowl with noodles, chicken, avocado, and lot’s of fresh mint. Drizzle dressing over the top, and ENJOY! Serve with a crisp white wine.
PRO TIP: Cut the noodles up with kitchen shears to make it easier for the kiddos.
