Nothing says comfy, cozy like a bowl full of chili by a warm fire! I have been stalking Pinterest for the perfect recipe and finally found a Whole30 Instant Pot chili recipe that the whole family would love. Typically, chili contains a ton of beans and other ingredients we don’t eat. However, this recipe is not only delish, but is also super simple, quick, and Whole30 compliant. But don’t worry, no one has to know…it is JUST as delish as traditional chili. The hubs even requested it for dinner again tonight! So, let’s take back our weeknights by not spending all night in the kitchen.

WHOLE30 INSTANT POT CHILI
THE MOST DELICIOUS, EASIEST INSTANT POT CHILI RECIPE
I found this recipe on the website Nom Nom Paleo. I pretty much stuck to the original recipe but made a couple changes. We LOVE the White Oak Pastures grass fed ground beef, but any ground beef will work. For this recipe, I used 85/15 meat, but you can also opt for a lower fat version. I opted for ghee instead of EVOO, because the flavor is SO GOOD. Personally, the toppings absolutely make this dish. I added lime wedges, avocado, white and green onions, coconut yogurt, and hot sauce. The cayenne pepper is optional, but I chose to add this as well…the spicier, the better! HOWEVER, make sure you omit this ingredient if your kiddos are sensitive to spicy foods, because it does give it quite the kick!
SERVING TIP: While you are cooking the chili, you can bake some sweet potatoes in the oven. Then serve the chili on top of the sweet potatoes with the toppings I list below. YUM.com!
INSTANT POT TIPS
This was my first attempt at the Instant Pot, and it was as easy as advertised! Here are a few tips:
- Make sure you put the silver insert in the main pot. This is required and makes clean up super easy.
- Don’t forget to “lock” the Instant Pot valve.
- Use the Instant Pot timer. I started freaking out when the timer on the Instant Pot said 13 minutes and my timer said 9 minutes. DON’T WORRY, this is by design! The Instant Pot timer does not start until the pressure builds up to the appropriate amount, so there may be a small lag.
- In regards to letting the pressure release naturally or forcing the pressure out, it really depends on the recipe. For this recipe, I allowed it release on it’s own. I hate to give you this answer, BUT the best thing to do is Google it based on what your cooking. For example, you would use a different method for releasing the pressure when cooking sweet potatoes than you would when cooking soup. So, just google “instant pot sweet potato pressure release” or something similar. Click here for a great guide on pressure releasing as well.
